Our most requested receipe, we call this one “Eggs de Provence.” The spice that gives it flavor is Herbs de Provence, but you can subsitute any combination of your favorite of herbs. To make it gluten-free, simply substitute cornstarch for the flour. The recipe for Apple-Oatmeal Bread can be found on our May 2009 post.
Eggs de Provence
- 1 lb pepper jack cheese
- 1 cup cottage cheese
- 3 oz cream cheese
- 2 Tbsp unsalted butter
- 1/2 tsp herbs de provence
- 8 eggs
- 1 cup skim milk
- 1/2 cup flour
- 1 Tbsp baking powder
If baking immediately, preheat oven to 350. Prepare 9X13 baking pan with cooking spray. Cut pepper jack cheese into cubes. In a bowl, combine pepper jack and cottage cheese, then spread evenly in baking pan. Pinch off 1/2″ pieces of cream cheese and scatter evenly over cheese mixture along with butter cut into very small bits. Sprinkle with herbs. Mix eggs, milk, flour, & baking powder until well blended. Pour over cheese & herbs. Bake uncovered at 350 degrees for 45 minutes. Can be prepared in advance, refrigerated overnight and then baked as directed.
Serves eight. Leftovers can be reheated in the microwave.
